Pop-up Cheese Wheel Pasta Bar In BGC Is Making Our Hearts Melt

Tons of people enjoy pasta loaded with cheese. Perhaps it has something to do with the comforting flavor of coagulated milk. Folks in Taguig are living a cheese lover’s dream with a very unique spaghetti bar.

A pop-up in Mercato, Pasta Ruota, is making a name for itself thanks to a special method of preparing pasta—in a giant cheese wheel!

The signature dish is Fettucine Alfredo that is mixed inside a huge Parmigiano Reggiano or Grana Padano cheese wheel. You have the choice to top the pasta with a generous amount of either pesto and sundried tomatoes, bacon, Italian garlic sausage, or mushroom with truffle oil.

Pauline Acio-Conchada, one of the four co-owners, shared the concept and origin of their store. “My sister Diana and I are foodies by heart. So, combining our passion for travel and food, we encountered the cheese wheel. We did our research and saw that the cheese wheel was only offered either in high-end restos or hotel, which limits the majority of people to experience it. Immediately, we thought that it would be nice if we can offer it at a reasonable price but without sacrificing quality.”

Pauline adds, “For a large number of people to experience our food and reach us, we thought that street food vibe is the way to go. We then penetrated the pop-up market scene so we can align our vision of a grab and go concept.”

The pasta is priced at P170.00. There is also a cheese plate for P150.00, 5 oz. wine for P65.00, and a bread basket with balsamic dip for P35.00.

Worried about bad cheese? Don’t be. They keep their cheese wheel fresh and sanitized by torching the used surface before and after each use. By doing so, the pores are sealed so that bacteria won’t grow inside. They then freeze the wheel for the next day.

The cheese wheel pasta bar opened in March 15. In under a month, they have established themselves as a promising and formidable food stall. At the moment, they only have the pilot stall in Mercato Centrale, Bonifacio Global City. However, they plan on aggressively expanding in the pop-up market scene and later offer the catering.
