♦ 1 cup kalabasa, cut into cubes
♦ 2 medium carrots, peeled and cut into cubes
♦ A thumb of fresh ginger, grated
♦ 3 to 4 garlic cloves, peeled and crushed
♦ 3 to 4 cups water
♦ 1 tbsp. turmeric powder
♦ ¼ tsp. black pepper
♦ ½ cup coconut milk
Add kalabasa, carrots, ginger, garlic and water in a pot and let it boil.
Once it’s boiling, turn down heat and let it simmer until the kalabasa and carrots are fork tender.
When done, remove from heat and let it cool.
Once it’s cooler (but not cold), transfer the vegetables to a blender with about ½ to 1 cup of the boiled water.
Add turmeric powder and black pepper and blend until smooth.
Transfer to pot and add coconut milk.
Mix and let it boil. Once it boils, turn off the heat.
